Dough Ingredients:
- 180ml water
- 50ml olive oil
- 1/2 a shot of raki
- Juice from a lemon
- 1/2 tsp of salt
- 1/2 tsp of sugar
- 500gr hard flour
Syrup Ingredients:
- 200ml water
- 400gr sugar
- 1 cinnamon stick
- 200gr Organic Toplou Honey
For sprinkling:
Sesame, Cinnamon powder
Olive oil for frying
Execution:
In a bowl, first pour all the liquids for the dough and mix. Gradually add the sifted flour and knead very well until you have a pliable dough. Cover with a towel and let the dough rest for an hour.
Flour a surface and get large balls of dough. Open the sheet with a pasta machine at first in the thick step a few times until the sheet is layered.
Then turn the machine to the thinnest step and open a long leaf, about a meter. With a roller cut strips 3-4 cm wide.
In a deep frying pan pour enough olive oil and let it heat very well. Ideally one person should open the sheet and another to fry so that the sheet does not dry out.
We hold the sheet carefully in our hand and throw its edge into the pan, after it makes the first bubbles we wrap the edge in a fork and holding the fork firmly at the edge of the pan we start to wrap. We should leave a free sheet in the pan to make the blisters and at the same time we wrap the sheet loosely, not tightly.
Turn the end of the leaf towards the inside of the rose that has been created. With two forks we turn the frying pan towards the walls of the pan to make it as circular as possible, we turn on the other side to get color.
Transfer the skewers to a colander with kitchen paper and let the oil strain very well. Ideally we make the xerotigana one day and the next day we grind.
In a saucepan pour the water with the sugar and the cinnamon stick. Boil at a moderate temperature until the sugar melts. Remove from the heat and add the honey, stirring until melted.
Dip one by one in the skewers, turn and on the other side to be well melted. Leave the excess honey in a colander. The syrup should be lukewarm, if necessary reheat to continue.
Transfer the xerotigana to a plate and sprinkle with sesame seeds and cinnamon that we have mixed.
