Dough Ingredients:
- 1 kg of flour for all uses
- 1,5 cup of olive oil
- 1/2 cup of orange juice
- 1 cup sugar
- 2 tsp of organic Toplou honey
- 1/3 cup raki
- 1/3 cup lukewarm water
- 2 tsp baking powder
- 2 tsp of ammonia
Stuffing:
- 1 cup raisins from sultani grape
- 1/2 cup of water
- 1 cup walnuts & almonds
- 2 tsp of organic Toplou honey
- 1 tsp of cinnamon cloves
- 1/2 cup of peeled sesame seeds
- Lemon or orange zest
For serving, optionally a little sugar.
Execution:
Soak the raisins in lukewarm water and set them aside.
We clean the sesame from any foreign bodies and we rinse it.
Roast it in a pan until it dries and smells light.
Mix the sugar with the olive oil in a bowl and add the raki and water.
When they are homogenized, add the orange juice (in which we dissolve the ammonia).
Be careful when you put ammonia in the orange juice because it swells.
Mix the baking powder in the flour and add it to the mixture.
Let the dough rest.
Grind the raisins in the mixer and put them in a bowl where we will add the coarsely ground nuts, honey, lightly ground sesame and cinnamon with cloves.
Stir to mix ingredients and aromas.
Take pieces of dough about the size of a medium-sized orange and open long narrow leaves.
Put in the filling and shape it into a bun.
We place them on a plate with oil glue.
Bake in a preheated oven at 180 degrees for 35 ‘.
Leave them to cool and cut into pieces.
They are ready to serve.
