Cupcakes with honey, banana & peanut butter
Ingredients:
- 3 ripe bananas, melted with a fork (about 200 g)
- 1 cup Honey Toplou Thyme-Pine
- 2 tbsp peanut butter (natural, no sugar)
- 1 large egg
- 3 tbsp cow yogurt, strained
- 1 cup all-purpose flour, wholemeal (sifted with 1 tsp baking powder)
- 3 tbsp oatmeal
- 1 vanilla and 1/2 tsp cinnamon
for the icing:
- 2 tbsp Toplou Thyme-Pine Honey
- 2 tbsp peanut butter
Execution:
Preheat the oven to 170 degrees in air and place the paper trays in a cupcake tin. Melt the bananas on a plate with a fork to make a puree. In a large bowl, pour all the liquid ingredients (egg, honey, peanut butter, yogurt) and the bananas and what we beat with the whisk to combine well. Add the oat flakes and the sifted flour. Distribute the dough in the cupcake tray and bake for 15-18 minutes. Let the cakes cool very well and in a small bowl mix the honey with the peanut butter. With a teaspoon we pour the “icing” of peanut butter in each cake and if we want we garnish with caramelized nuts (when it is not for children, for obvious reasons).
